Ingredients

Scale
  • 2 cups all-purpose flour
  • 3 tbsp ghee (or oil)
  • 1/2 tsp salt
  • 1/2 cup sooji (semolina)
  • 1/2 cup chopped nuts (almonds and cashews)
  • 1/2 cup powdered sugar
  • 1/2 tsp cardamom powder
  • Oil or ghee for frying

Instructions

  1. Prepare the Dough: In a large bowl, mix flour and salt. Add melted ghee and mix until crumbly. Gradually add water to form a soft dough. Cover with a damp cloth and let it rest for 30 minutes.
  2. Make the Filling: Combine roasted semolina, chopped nuts, powdered sugar, and cardamom powder in another bowl; mix well.
  3. Roll Out Pastries: Divide dough into small balls. Roll each ball into thin circles (5-6 inches in diameter) on floured parchment paper.
  4. Fill and Shape Gujiya: Place 1 tablespoon of filling on one half of each circle. Fold over to create a semi-circle, pressing edges firmly to seal. Use a fork to crimp edges.
  5. Fry Until Golden Brown: Heat oil or ghee in a deep pan over medium heat. Fry gujiyas in batches until golden brown and crispy; drain on paper towels.
  6. Serve Warm: Dust with powdered sugar if desired and enjoy!
