- Make the Filling: Combine roasted semolina, chopped nuts, powdered sugar, and cardamom powder in another bowl; mix well.
- Roll Out Pastries: Divide dough into small balls. Roll each ball into thin circles (5-6 inches in diameter) on floured parchment paper.
- Fill and Shape Gujiya: Place 1 tablespoon of filling on one half of each circle. Fold over to create a semi-circle, pressing edges firmly to seal. Use a fork to crimp edges.
- Fry Until Golden Brown: Heat oil or ghee in a deep pan over medium heat. Fry gujiyas in batches until golden brown and crispy; drain on paper towels.
