  • 1 cup Monterey Jack cheese (shredded)

  • 1 cup all-purpose flour

Instructions

  1. Preheat oven to 375°F (190°C). Prepare a greased baking dish.
  2. In a skillet, heat olive oil over medium heat. Sauté the onion and garlic until translucent (3-4 minutes).
  3. Add corn and hatch chilis to the skillet; cook for another 5 minutes.
  4. In a large bowl, whisk eggs until frothy, then mix in shredded cheeses, salt, and pepper.
  5. Fold in the sautéed mixture from the skillet.
  6. In another bowl, combine flour and baking powder; gradually add to the wet mixture without overmixing.
  7. Pour mixture into the prepared baking dish and bake for 25-30 minutes or until golden brown.
