Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1/2 teaspoon baking powder
  • 3/4 cup warm water
  • 1 cup granulated sugar
  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon saffron threads (optional)
  • Cooking oil for frying

Instructions

  1. In a bowl, combine all-purpose flour, cornstarch, baking powder, and warm water. Mix until smooth and let it rest for 30 minutes.
  2. In a pot, boil sugar with 1 cup water, adding saffron and cardamom until it reaches one-thread consistency (about 10 minutes).
  3. Heat oil in a deep pan over medium heat. Test readiness by dropping a small amount of batter into the oil; it should sizzle immediately.
  4. Using a piping bag or squeeze bottle, swirl the batter into small spirals in the hot oil. Fry until golden brown (2-3 minutes per side).
  5. Immediately dunk each jalebi into the warm sugar syrup for a few seconds before serving.
