Instructions

  1. Cook the rotini pasta in salted water according to package directions until al dente. Drain and rinse under cold water.
  2. While the pasta cools, chop the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper until well combined.
