Ingredients

Scale
  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 4 slices Swiss or American cheese
  • 1 large sweet onion, sliced
  • 4 slices rye or sourdough bread
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, melt 1 tablespoon of butter and add sliced onions. Cook until caramelized, about 15 minutes, stirring occasionally.
  2. Form ground beef into two patties and season with salt and pepper. Increase heat to medium-high and cook the patties for 3-4 minutes per side until browned.
  3. During the last minute of cooking, place cheese slices on top of each patty. Cover the skillet to help melt the cheese evenly.
  4. In another skillet, melt remaining butter and toast the bread until golden brown.
  5. Assemble by placing one cheesy patty on a slice of toasted bread, adding caramelized onions, and topping it with another slice of bread.
  6. Cut in half and serve immediately for optimal flavor.
