  • 8 oz spaghetti or fettuccine
  • 1 cup fresh cremini or shiitake mushrooms, sliced
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Reserve ½ cup of pasta water, then drain.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic for 30 seconds until fragrant. Add sliced mushrooms and cook until golden brown.
  3. Reduce heat and stir in heavy cream. Simmer for 3-5 minutes until slightly thickened.
  4. Toss in the drained pasta, adding reserved pasta water as needed for desired consistency. Season with salt and pepper.
  5. Remove from heat and mix in Parmesan cheese until melted. Garnish with chopped parsley before serving.
