Description

Creamy Mushroom Risotto is the ultimate comfort food that envelops your senses with its velvety texture and rich flavors. This Italian classic combines Arborio rice with earthy mushrooms, aromatic herbs, and a splash of white wine, creating a dish that feels indulgent yet is surprisingly easy to prepare.

Ingredients

Scale
  • 1 cup Arborio rice
  • 8 oz fresh cremini mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth (heated)
  • ½ cup dry white wine
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. In a heavy-bottomed saucepan, heat olive oil and butter over medium heat. Sauté onions until translucent.
  2. Add garlic and mushrooms; cook until mushrooms are tender.
  3. Stir in Arborio rice and toast for about 2 minutes.
  4. Pour in white wine, stirring until mostly evaporated.
  5. Gradually add warm vegetable broth one ladle at a time, allowing absorption before each addition (about 18-20 minutes).
  6. Remove from heat, stir in Parmesan cheese, and season with salt and pepper.
