  • 2 pounds Yukon Gold potatoes
  • 1 whole bulb garlic
  • Β½ cup unsalted butter
  • Β½ cup heavy cream
  • Kosher salt and freshly ground black pepper

Instructions

  1. Preheat the oven to 400Β°F (200Β°C). Slice off the top of the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. Peel and cut the potatoes into chunks. Place in a pot with cold salted water, bring to a boil, then reduce heat and simmer until fork-tender (15-20 minutes).
  3. Drain the potatoes and return them to the pot. Squeeze in the roasted garlic cloves, add butter and heavy cream.
