Description

  • 1 lb lean ground beef
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a skillet over medium heat, brown the ground beef for about 5-7 minutes. Drain excess fat.
  2. Stir in cumin, garlic powder, chili powder, salt, and pepper; simmer for another minute until fragrant.
  3. Remove from heat; mix in half of the shredded cheeses until melted.
  4. Place approximately two tablespoons of the beef mixture onto each tortilla's center. Fold sides in and roll tightly.
  5. Heat about an inch of oil in a deep skillet to 350°F (175°C). Fry chimichangas seam-side down until golden brown on all sides (about 3-4 minutes). Drain on paper towels.
