Description

Ingredients

  • 2 large eggs

  • Salt and pepper, to taste

  • 1 cup plain Greek yogurt (for dipping)

Instructions

  1. Grate the zucchini and squeeze out excess moisture with a clean kitchen towel.
  2. In a bowl, mix grated zucchini, flour, eggs, feta cheese, dill, salt, and pepper until well combined.
  3. Heat olive oil in a non-stick skillet over medium heat.
  4. Drop spoonfuls of the mixture into the hot pan and flatten slightly. Cook until golden brown, about 3–4 minutes per side.
  5. For the yogurt dip, mix Greek yogurt with minced garlic and herbs to taste.
  6. Serve warm with the yogurt dip.
