Instructions
- Grate the zucchini and squeeze out excess moisture with a clean kitchen towel.
- In a bowl, mix grated zucchini, flour, eggs, feta cheese, dill, salt, and pepper until well combined.
- Heat olive oil in a non-stick skillet over medium heat.
- Drop spoonfuls of the mixture into the hot pan and flatten slightly. Cook until golden brown, about 3β4 minutes per side.
- For the yogurt dip, mix Greek yogurt with minced garlic and herbs to taste.
