Ingredients

  • 200g dark chocolate (70% cocoa)
  • 300ml heavy whipping cream
  • 100g toasted hazelnuts, finely chopped
  • 80g powdered sugar
  • 3 egg whites

Instructions

  1. Melt the dark chocolate in a heatproof bowl over simmering water until smooth; cool slightly.
  2. In a separate bowl, whip the cold heavy cream with half of the powdered sugar until stiff peaks form.
  3. Whip the egg whites in another bowl until soft peaks form; gradually add remaining powdered sugar and whisk until stiff peaks form.
  4. Gently fold half of the whipped cream into the melted chocolate; then fold in half of the egg whites. Repeat with remaining cream and egg whites.
  5. Fold in chopped hazelnuts until evenly distributed.
  6. Spoon mousse into serving dishes and refrigerate for at least 2 hours before serving.
