Ingredients
- 200g dark chocolate (70% cocoa)
- 300ml heavy whipping cream
- 100g toasted hazelnuts, finely chopped
- 80g powdered sugar
- 3 egg whites
Instructions
- Melt the dark chocolate in a heatproof bowl over simmering water until smooth; cool slightly.
- In a separate bowl, whip the cold heavy cream with half of the powdered sugar until stiff peaks form.
- Whip the egg whites in another bowl until soft peaks form; gradually add remaining powdered sugar and whisk until stiff peaks form.
- Gently fold half of the whipped cream into the melted chocolate; then fold in half of the egg whites. Repeat with remaining cream and egg whites.
- Fold in chopped hazelnuts until evenly distributed.
- Spoon mousse into serving dishes and refrigerate for at least 2 hours before serving.
