  • 1 Β½ cups graham cracker crumbs
  • Β½ cup unsalted butter, melted
  • 2 cups fresh blackberries
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs
  • 2 tbsp cornstarch

Instructions

  1. Preheat oven to 325Β°F (160Β°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes.
  3. Beat the softened cream cheese until smooth. Gradually mix in sugar, then add sour cream and vanilla extract.
  4. Add eggs one at a time, mixing gently after each addition. Fold in half of the blackberries.
  5. Pour the filling over the baked crust and bake for 55–60 minutes or until slightly jiggly in the center.
  6. Allow to cool completely before refrigerating for at least four hours or overnight.
