Description

Ingredients

  • 4 boneless skinless chicken thighs
  • 4 medium Yukon Gold potatoes, thinly sliced
  • 1 cup cream of mushroom soup
  • 1 cup low-sodium chicken broth
  • 4 cloves garlic, minced

Instructions

  1. Preheat the oven to 375Β°F (190Β°C) and grease a large baking dish.
  2. Layer sliced potatoes evenly at the bottom of the dish and season with salt and pepper.
  3. Place seasoned chicken thighs on top of the potatoes.
  4. In a bowl, mix the cream of mushroom soup with chicken broth until smooth; pour over the chicken and potatoes.
  5. Sprinkle minced garlic on top. Cover with aluminum foil and bake for 45 minutes.
  6. Remove the foil and bake for an additional 10 minutes until golden brown.
