Ingredients

Scale
  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup ranch dressing
  • 2 ripe avocados
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded romaine lettuce
  • 1 cup diced tomatoes

Instructions

  1. Preheat the oven to 375°F (190°C). Place chicken breasts on a parchment-lined baking sheet, season with salt and pepper, and bake for 25-30 minutes until cooked through. Shred the chicken once cooled.
  2. In a bowl, mix shredded chicken with ranch dressing. Stir in diced tomatoes and shredded cheese.
  3. Halve avocados, remove pits, scoop out flesh, and slice thinly.
  4. Lay tortillas flat; add chicken mixture down the center, top with avocado slices and lettuce. Roll tightly.
  5. For crispy edges, toast burritos seam-side down in a skillet over medium heat until golden brown.
  6. Cut diagonally and serve with extra ranch dressing.
