- 3–4 boneless, skinless chicken breasts
- 1 head of fresh romaine lettuce
- Β½ cup freshly grated Parmesan cheese
- Β½ cup Caesar dressing
- Β½ cup cooked bacon bits
- 1 cup croutons
- Juice of 1 lemon
Instructions
- Preheat grill to medium-high heat. Season chicken breasts with salt and pepper; grill for 6-7 minutes per side until cooked through.
- While chicken grills, rinse and chop romaine lettuce into bite-sized pieces; place in a large bowl.
- Cook bacon in a skillet until crispy. Drain on paper towels and chop into bits. Add to the bowl with romaine alongside croutons.
- Once chicken is done grilling, let it rest for a few minutes before slicing thinly against the grain. Add sliced chicken to the salad bowl.
- Drizzle Caesar dressing over the salad, top with Parmesan cheese, and squeeze fresh lemon juice before tossing gently.
