A vibrant medley of grilled chicken, crisp romaine, and creamy dressing that elevates any meal with its refreshing flavors.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 head of fresh romaine lettuce
  • Β½ cup freshly grated Parmesan cheese
  • Β½ cup Caesar dressing
  • Β½ cup cooked bacon bits
  • 1 cup croutons
  • Juice of 1 lemon

Instructions

  1. Preheat grill to medium-high heat. Season chicken breasts with salt and pepper; grill for 6-7 minutes per side until cooked through.
  2. While chicken grills, rinse and chop romaine lettuce into bite-sized pieces; place in a large bowl.
  3. Cook bacon in a skillet until crispy. Drain on paper towels and chop into bits. Add to the bowl with romaine alongside croutons.
  4. Once chicken is done grilling, let it rest for a few minutes before slicing thinly against the grain. Add sliced chicken to the salad bowl.
  5. Drizzle Caesar dressing over the salad, top with Parmesan cheese, and squeeze fresh lemon juice before tossing gently.
