  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1 cup bell peppers, finely chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp paprika
  • ½ cup breadcrumbs (whole wheat or gluten-free)
  • 2 tbsp olive oil

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa with two cups of water or vegetable broth. Bring to a boil and then simmer on low for about 15 minutes until liquid is absorbed.
  2. In a mixing bowl, mash the black beans until chunky.
  3. Mix in bell peppers, onion, garlic, cooked quinoa, cumin, paprika, salt, and pepper until well combined.
  4. Gradually add breadcrumbs until the mixture holds together.
  5. Form into six patties approximately one inch thick.
  6. Heat olive oil in a skillet over medium heat and cook each patty for about five minutes on each side until golden brown.
