Ingredients

Instructions

  1. Rinse lentils under cold water until clear. Chop onion and mince garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté onion until translucent (about 5 minutes), then add garlic until fragrant.
  3. Stir in lentils and cumin seeds for about 1 minute to enhance flavors.
  4. Pour in vegetable broth; bring to a gentle boil. Reduce heat, cover partially, and simmer for about 30 minutes.
  5. Add spinach or kale until wilted. Remove from heat and stir in freshly squeezed lemon juice.
  6. Serve warm, garnished with extra olive oil or herbs if desired.
