Mediterranean Chickpea Wraps are a delightful blend of fresh veggies and creamy hummus, making for a nutritious and satisfying meal. Perfect for lunch or dinner, they’re quick to make and bursting with flavor.


Ingredients

  • 1 can chickpeas (15 oz), drained and rinsed
  • 2 whole wheat or spinach tortillas
  • 1 cup cherry tomatoes, diced
  • 1 cup cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Juice of 1 lemon
  • 1/2 cup hummus

Instructions

  1. Rinse and drain the canned chickpeas.
  2. Dice cherry tomatoes and cucumber; thinly slice red onion.
  3. In a bowl, combine chickpeas, tomatoes, cucumber, onion, parsley, mint, and lemon juice.
  4. Spread hummus over each tortilla.
  5. Spoon the chickpea mixture onto one side of the tortilla.
  6. Fold and roll tightly to secure.
