- Juice of 1 lemon
- 1/2 cup hummus
Instructions
- Rinse and drain the canned chickpeas.
- Dice cherry tomatoes and cucumber; thinly slice red onion.
- In a bowl, combine chickpeas, tomatoes, cucumber, onion, parsley, mint, and lemon juice.
- Spread hummus over each tortilla.
- Spoon the chickpea mixture onto one side of the tortilla.
