Ingredients

  • Garlic

  • Carrots
  • Canned tomatoes
  • Green or brown lentils
  • Chickpeas

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onions until translucent.
  2. Add minced garlic, chopped celery, and carrots; cook until softened (about 5 minutes).
  3. Stir in spices and canned tomatoes; sauté for another 2 minutes.
  4. Add rinsed lentils and vegetable broth or water; bring to a boil then simmer for 25 minutes.
  5. Incorporate chickpeas and simmer for an additional 10 minutes. Finish with fresh herbs and lemon juice before serving.
