Ingredients

  • Spaghetti (or pasta of choice)
  • Ripe cherry or grape tomatoes
  • Whole garlic cloves
  • Extra virgin olive oil
  • Fresh basil leaves
  • Salt
  • Pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice the top off a head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  3. Halve cherry tomatoes, place on a baking sheet, drizzle with olive oil, salt, and pepper. Roast alongside garlic for 20-25 minutes.
  4. Boil salted water and cook pasta according to package directions until al dente. Reserve some pasta water before draining.
  5. Mash roasted garlic into a paste.
  6. In a large bowl, mix pasta with roasted tomatoes and mashed garlic. Add torn basil and reserved pasta water as needed for desired consistency.
