Ingredients
- Spaghetti (or pasta of choice)
- Ripe cherry or grape tomatoes
- Whole garlic cloves
- Extra virgin olive oil
- Fresh basil leaves
- Salt
- Pepper
Instructions
- Preheat oven to 400°F (200°C).
- Slice the top off a head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
- Halve cherry tomatoes, place on a baking sheet, drizzle with olive oil, salt, and pepper. Roast alongside garlic for 20-25 minutes.
- Boil salted water and cook pasta according to package directions until al dente. Reserve some pasta water before draining.
- Mash roasted garlic into a paste.
- In a large bowl, mix pasta with roasted tomatoes and mashed garlic. Add torn basil and reserved pasta water as needed for desired consistency.
