  • 1 tsp paprika
  • 1/2 cup breadcrumbs (optional for binding)
  • 4 whole wheat buns
  • 1 avocado, sliced
  • Fresh lettuce leaves

Instructions

  1. Mash the black beans lightly in a bowl, leaving some texture.
  2. Cook quinoa according to package instructions and let it cool.
  3. In a mixing bowl, combine mashed beans, cooked quinoa, chopped bell peppers, onions, cumin, and paprika. Mix well.
  4. Form the mixture into patties (about 1/2 inch thick). If they fall apart, add breadcrumbs.
  5. Heat oil in a skillet over medium heat and fry each patty for about 4 minutes on each side until golden brown.
  6. Toast the whole wheat buns slightly. Assemble by layering a patty on each bun with avocado slices and fresh lettuce.
