  • 1 cup fine semolina
  • 1 cup granulated sugar
  • 1/2 cup unsweetened coconut flakes
  • 1 cup plain yogurt (or Greek yogurt)
  • 1 tsp baking powder
  • 1/2 cup blanched almonds (for topping)
  • 1/2 cup water (for syrup)
  • 1/4 cup lemon juice (for syrup)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a square baking dish.
  2. In a large bowl, whisk together semolina, sugar, baking powder, and coconut flakes until well combined.
  3. Add yogurt to the dry ingredients and mix into a thick batter.
  4. Spread the batter evenly in the prepared dish and score diamond shapes on top. Bake for 30-35 minutes until golden brown.
  5. While it bakes, prepare the syrup by boiling water and sugar together; add lemon juice after boiling for five minutes.
  6. Pour the warm syrup over the hot Basbousa once baked. Allow it to soak before serving.
