Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 ripe peaches, diced

- ¾ cup granulated sugar
- ½ cup sour cream
- 1 tsp pure vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a greased springform pan. Bake for 10 minutes until set.
- In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and continue mixing until fluffy. Blend in sour cream and vanilla extract.
- Gently fold diced peaches and half of the mixed berries into the cream cheese mixture.
- Pour the filling over the baked crust and smooth the top with a spatula. Sprinkle remaining berries on top.
- Cover with plastic wrap and refrigerate for at least four hours or overnight to set.
- Once chilled, remove from the springform pan, slice into wedges, and serve chilled.
