  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 ripe peaches, diced
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • ½ cup sour cream
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a greased springform pan. Bake for 10 minutes until set.
  2. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and continue mixing until fluffy. Blend in sour cream and vanilla extract.
  3. Gently fold diced peaches and half of the mixed berries into the cream cheese mixture.
  4. Pour the filling over the baked crust and smooth the top with a spatula. Sprinkle remaining berries on top.
  5. Cover with plastic wrap and refrigerate for at least four hours or overnight to set.
  6. Once chilled, remove from the springform pan, slice into wedges, and serve chilled.
