Ingredients

  • 1 cup green or brown lentils
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 2 cups fresh spinach or kale
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions until translucent.
  2. Add diced carrots and celery; cook for about 5 minutes until softened.
  3. Stir in minced garlic, cumin, and paprika; sauté for another minute.
  4. Pour in rinsed lentils and vegetable broth. Bring to a boil, then reduce heat to simmer for 30 minutes.
  5. Add spinach or kale; stir until wilted (about 5 minutes).
  6. Season with salt and pepper before serving.
