- 2 celery stalks, diced
- 1 large onion, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 2 cups fresh spinach or kale
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions until translucent.
- Add diced carrots and celery; cook for about 5 minutes until softened.
- Stir in minced garlic, cumin, and paprika; sauté for another minute.
- Pour in rinsed lentils and vegetable broth. Bring to a boil, then reduce heat to simmer for 30 minutes.
- Add spinach or kale; stir until wilted (about 5 minutes).
- Season with salt and pepper before serving.
