- 8 oz egg noodles

Instructions
- In a large skillet, heat a splash of oil over medium-high heat. Add ground beef and cook until browned, breaking it apart with a wooden spoon.
- Once the beef is browned, add chopped onion and minced garlic. SautΓ© until onions are translucent, about 3-5 minutes.
- Stir in sliced mushrooms and cook for another 5 minutes until softened.
- Pour in beef broth and Dijon mustard, scraping up any brown bits from the skillet. Bring to a gentle simmer.
- Remove from heat and stir in sour cream until smooth. Season with salt and pepper to taste.
- Serve over cooked egg noodles or rice, garnished with fresh parsley if desired.
