Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups blackberries (fresh or thawed)
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until moistened. Press firmly into the bottom of a springform pan.
  2. Bake crust for about 10 minutes until golden brown. Cool completely.
  3. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and vanilla, mixing well.
  4. Fold in sour cream and lemon juice until combined.
  5. Mash half of the blackberries and fold into the mixture with the remaining whole blackberries.
  6. Pour filling over cooled crust. Bake at 325°F (160°C) for about 50 minutes or until slightly jiggly in the center.
  7. Cool at room temperature before chilling in the refrigerator overnight.
