- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter (melted)
- 16 oz cream cheese (softened)
- 1 cup sour cream
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 2 cups blackberries (fresh or thawed)
- 1 tbsp lemon juice
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until moistened. Press firmly into the bottom of a springform pan.
- Bake crust for about 10 minutes until golden brown. Cool completely.
- In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and vanilla, mixing well.
- Fold in sour cream and lemon juice until combined.
- Mash half of the blackberries and fold into the mixture with the remaining whole blackberries.
- Pour filling over cooled crust. Bake at 325°F (160°C) for about 50 minutes or until slightly jiggly in the center.
- Cool at room temperature before chilling in the refrigerator overnight.
