Ingredients

  • 45 medium carrots, grated
  • 2 cups full-fat milk
  • Β½ cup sugar (or jaggery)
  • 1 tsp cardamom powder
  • 3 tbsp ghee (or unsalted butter)
  • Chopped nuts (cashews and almonds)
  • Β½ cup soaked sultanas (raisins)

Instructions

  1. Wash and peel the carrots, then grate them finely.
  2. In a heavy-bottomed pan, melt ghee over medium heat and add grated carrots with milk.
  3. Simmer the mixture for 30-40 minutes, stirring occasionally until thickened.
  4. Stir in sugar and cardamom powder until well combined.
  5. Add chopped nuts and soaked raisins; cook for an additional 5-10 minutes.
  6. Serve warm, garnished with extra nuts if desired.
