Ingredients

  • 34 boneless skinless chicken breasts
  • 1 cup long-grain rice
  • 3 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 2 cups low-sodium chicken broth
  • 2 tablespoons olive oil
  • Fresh thyme and parsley, to taste
  • Salt and pepper, to taste

Instructions

  1. Gather and chop garlic, onions, and herbs.
  2. Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then sear until golden brown on both sides. Remove from the pan.
  3. In the same skillet, sauté diced onions and minced garlic for about 3 minutes until translucent.
  4. Stir in the long-grain rice to toast slightly before adding chicken broth. Bring to a simmer.
  5. Return the seared chicken to the skillet, cover tightly, and cook for about 20 minutes until the liquid is absorbed.
  6. Sprinkle fresh herbs on top before serving hot.
