  • 1 lb large shrimp, peeled and deveined

  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • Juice of 1 medium lemon

Instructions

  1. Cook the pasta according to package instructions until al dente; reserve half a cup of pasta water before draining.
  2. In a skillet, heat olive oil and 2 tablespoons of butter over medium heat. Add garlic and sauté until fragrant.
  3. Add shrimp in a single layer; cook until pink (about 3 minutes per side). Remove shrimp from skillet.
  4. Pour lemon juice and reserved pasta water into the skillet; stir well.
  5. Return drained pasta to the skillet along with remaining butter and parsley; toss to coat evenly.
  6. Serve immediately, garnished with extra parsley.
