- 1 can (15 oz) chickpeas, rinsed
- 1 cup cherry tomatoes, halved

- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Rinse chickpeas under cold water. Cook quinoa according to package instructions (about 15 minutes).
- Dice cherry tomatoes and finely chop red onion and parsley.
- In a small bowl, whisk together lemon juice, olive oil, cumin, paprika, salt, and pepper until well combined.
- In a large mixing bowl, combine cooked quinoa, chickpeas, diced veggies, and dressing. Mix until evenly coated.
- For enhanced flavor, refrigerate for at least 30 minutes before serving.
