Ingredients

  • 1 cup green or brown lentils
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) crushed tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 tsp cumin
  • 1 tsp dried thyme
  • Olive oil, salt & pepper to taste

Instructions

  1. Wash and chop the onions, carrots, and celery into small pieces.
  2. In a large pot over medium heat, add olive oil and sautΓ© onions until soft and golden.
  3. Add carrots and celery; cook for a few more minutes.
  4. Stir in minced garlic and cook until fragrant.
  5. Add rinsed lentils and canned tomatoes; mix well.
  6. Pour in vegetable broth, bring to a gentle boil, reduce heat, and simmer for 30-40 minutes until lentils are tender.
  7. Season with salt and pepper as needed; serve warm garnished with fresh herbs if desired.
