  • 1.5 lbs boneless, skinless chicken breasts (3–4 pieces), cubed
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 medium red onion, cut into chunks
  • 1 medium zucchini, sliced into thick rounds
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp honey
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk together olive oil, balsamic vinegar, honey, garlic powder, salt, and pepper.
  2. Add cubed chicken to the marinade and toss until well coated. Cover and refrigerate for at least 30 minutes.
  3. While chicken marinates, chop the vegetables.
  4. Thread alternating pieces of marinated chicken and vegetables onto skewers.
  5. Preheat your grill to medium-high heat (375Β°F). If using wooden skewers, soak them in water for 30 minutes prior to grilling.
