Each bite offers a burst of fruity flavor, making them a favorite for both kids and adults alike.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup whole milk (or almond milk)
  • 1/3 cup vegetable oil (or melted butter)
  • 1 large egg
  • 1 1/2 cups fresh blueberries (or frozen)

Instructions

  1. Preheat your oven to 375Β°F (190Β°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. In another bowl, mix the milk, oil, and egg until smooth.
  4. Fold the wet ingredients into the dry ingredients until just combined; lumpy batter is okay.
  5. Gently fold in the blueberries to avoid breaking them.
  6. Spoon the batter into muffin tins about two-thirds full.
  7. Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
  8. Allow to cool in the pan for 5 minutes before transferring to a wire rack.
