  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 tsp ground cinnamon
  • 1/2 tsp freshly grated nutmeg
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by peeling and cubing the butternut squash. Chop the onion and mince the garlic.
  2. In a large pot over medium heat, add olive oil. Sauté onions until translucent (about 5 minutes). Stir in minced garlic for an additional minute.
  3. Add cubed butternut squash and enough vegetable broth to cover. Bring to a boil, then reduce heat and simmer until tender (about 20 minutes).
  4. Blend the mixture until smooth using an immersion blender or regular blender (let cool slightly first).
  5. Return blended soup to low heat; stir in coconut milk, cinnamon, nutmeg, salt, and pepper.
