  • 1 lb lean ground beef
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced pickles
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • 12 eggroll wrappers
  • Vegetable oil for frying

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Stir in diced pickles, ketchup, mustard, and half of the shredded cheddar cheese until well combined.
  3. Lay an eggroll wrapper on a clean surface and spoon about two tablespoons of the mixture onto the center.
  4. Fold the bottom corner over the filling, fold in the sides tightly, then roll towards the top corner to seal.
  5. Heat vegetable oil in a deep pan to 350°F (175°C). Fry each eggroll until golden brown on both sides, about 3-4 minutes per side.
  6. Drain on paper towels and serve warm with dipping sauces.
