  • 3–4 boneless, skinless chicken breasts
  • 8 oz elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 2 cups whole milk
  • 4 tbsp unsalted butter
  • ΒΌ cup all-purpose flour
  • 1 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Cook elbow macaroni in salted boiling water until al dente; drain.
  2. In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then cook until golden on both sides. Dice once cooked.
  3. For the cheese sauce, melt butter in a saucepan over medium heat. Whisk in flour to form a roux, then gradually add milk, stirring until thickened.
  4. Remove from heat and stir in shredded cheddar until melted; add garlic powder and seasoning.
  5. Combine cooked macaroni and diced chicken with the cheese sauce; mix well.
  6. (Optional) Transfer to a greased baking dish, top with additional cheddar, and bake at 350Β°F for 20 minutes.
