Ingredients
- 2 cups basmati rice
- 1.5 lbs boneless chicken thighs
- 2 large onions (sliced thin)
- 2 tbsp fresh ginger-garlic paste
- 1 tsp garam masala
- 1 tsp cumin powder
- 1 tsp coriander powder
- 3–4 cardamom pods
- A pinch of saffron threads (soaked in 2 tbsp warm water)
- 1 cup plain yogurt
- 1/4 cup fresh cilantro (chopped)
- 1/4 cup fresh mint (chopped)
- Salt to taste
- 4 tbsp ghee or oil
Instructions
- Marinate the chicken in yogurt, ginger-garlic paste, garam masala, cumin, coriander, salt, and saffron water for at least one hour.
- Rinse the basmati rice under cold water until clear; soak for 30 minutes and drain.
- In a large pot, heat ghee/oil over medium heat. Sauté sliced onions until golden brown; reserve half for garnishing.
- Add marinated chicken to the pot, cooking until browned.
- Layer soaked rice over the chicken, adding cardamom pods, saffron strands, cilantro, mint, and drizzle melted ghee on top.
- Pour enough water to cover by half an inch. Cover tightly and cook on low heat for 30-35 minutes until rice absorbs moisture completely.
- Serve hot with extra caramelized onions and herbs on top.
