  • 1 cup salsa
  • 6 flour tortillas
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 1 can (15 oz) black beans, rinsed
  • 1 cup corn (fresh or canned)
  • 2 tsp taco seasoning
  • 1/2 cup sour cream
  • 2 green onions, chopped

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, add 2 tsp olive oil and cook diced chicken until golden brown (6-7 minutes).
  3. Stir in salsa, black beans, corn, and taco seasoning; heat through for about 3-4 minutes.
  4. Layer tortillas at the bottom of the baking dish and spoon half of the chicken mixture on top. Repeat layering with remaining tortillas and chicken.
  5. Sprinkle with cheese and bake for 20-25 minutes until bubbly and golden. Let cool briefly before serving.
