  • 1.5 lbs boneless skinless chicken thighs
  • 1 cup plain full-fat yogurt
  • 1 inch fresh ginger, grated
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Mint chutney (blend fresh mint leaves with yogurt and lime juice)

Instructions

  1. Prepare the marinade by whisking yogurt, ginger, garlic, spices, salt, pepper, and lemon juice in a large bowl.
  2. Cut chicken into bite-sized pieces and coat them in the marinade. Cover and refrigerate for at least 2 hours or overnight.
  3. Preheat grill to medium-high heat (400Β°F/200Β°C). Soak wooden skewers for 30 minutes if using.
  4. Thread marinated chicken onto skewers. Optionally add bell peppers or onions.
  5. Grill skewers for 10-15 minutes, turning occasionally until charred and cooked through.
  6. Serve hot with mint chutney and naan or rice.
