  • 1 cup granulated sugar (for the filling)

  • 1/2 teaspoon baking powder

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix flour, 1/2 cup sugar, and salt. Add melted butter; stir until crumbly. Press into the bottom of the prepared dish and bake for about 20 minutes until lightly golden.
  3. In another bowl, whisk eggs until frothy. Add 1 cup sugar, lemon juice, zest, and baking powder; mix well.
  4. Pour filling over the baked crust. Return to oven for an additional 20-25 minutes until set but slightly jiggly in the center.
  5. Cool completely before slicing into squares.
