  • 1 cup provolone cheese (shredded)
  • 1 cup bell peppers (sliced; mix of red and green)
  • 1 medium yellow onion (sliced)
  • 4 large flour tortillas
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Thinly slice ribeye steak against the grain. Chop bell peppers and onion into strips.
  2. Season steak with salt, pepper, and garlic powder.
  3. In a skillet over medium heat, add 1 tablespoon of olive oil. Sauté bell peppers and onions until soft (about 5 minutes).
  4. Push veggies aside, add seasoned steak to the pan, and cook until browned but juicy (about 3 minutes).
  5. On one half of each tortilla, layer sautéed veggies and steak mixture. Top with provolone cheese.
  6. Fold tortillas tightly around filling. Grill seam-side down in a skillet brushed with remaining olive oil until golden brown on both sides (about 2 minutes each).
