  • 1 small onion, finely chopped

  • 2 tsp coriander
  • 1/4 cup pine nuts (optional)
  • 4 pita bread
  • 1 cup Greek yogurt (full-fat)
  • 1/2 cup fresh mint leaves, chopped
  • 2 tbsp lemon juice

Instructions

  1. In a large bowl, combine ground lamb, chopped onion, minced garlic, cilantro, cumin, and coriander. Mix well.
  2. With wet hands, shape the mixture into elongated patties or skewers about 3 inches long.
  3. Preheat your grill or stovetop grill pan to medium-high heat. Grill koftas for about 4-5 minutes on each side until browned and cooked through.
  4. For the mint sauce, mix Greek yogurt with chopped mint leaves and lemon juice in a small bowl. Season with salt and pepper to taste.
  5. Serve hot koftas on a platter with warm pita bread and drizzle generously with mint sauce.
