  • 4 hatch chilis, roasted and chopped
  • 1 lb lean ground beef
  • 8 corn tortillas
  • 1 cup shredded Monterey Jack cheese

  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt to taste

Instructions

  2. Roast hatch chilis until blistered. Let cool, then chop.
  3. In a skillet over medium heat, sauté onions in oil until golden. Add garlic and cook until fragrant.
