  • 2 cups fresh huckleberries
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 1 tsp baking powder
  • ½ cup unsalted butter, cold and cubed
  • ½ tsp salt
  • 2 tbsp lemon juice
  • 34 tbsp ice water

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, combine flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water until the dough holds together. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. Combine huckleberries with sugar, lemon juice, and flour in another bowl.
  5. Roll out half the dough into a circle and place it into a pie dish; trim excess edges.
  6. Pour the huckleberry mixture into the crust and roll out the remaining dough for topping. Seal edges well.
  7. Bake for 30-35 minutes until golden brown and bubbling. Cool slightly before serving.
