Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, combine flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Gradually add ice water until the dough holds together. Wrap in plastic wrap and refrigerate for 30 minutes.
- Combine huckleberries with sugar, lemon juice, and flour in another bowl.
- Roll out half the dough into a circle and place it into a pie dish; trim excess edges.
- Pour the huckleberry mixture into the crust and roll out the remaining dough for topping. Seal edges well.
- Bake for 30-35 minutes until golden brown and bubbling. Cool slightly before serving.
