  • 1 cup granulated sugar
  • 3 Earl Grey tea bags
  • 1/2 cup unsalted butter, softened
  • 3 large eggs (room temperature)
  • 2 tsp baking powder
  • 1 cup milk (whole or buttermilk)
  • 1 tsp lavender extract
  • 3 cups powdered sugar (for frosting)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and dust with flour.
  2. Steep three Earl Grey tea bags in one cup of boiling water for about 10 minutes; let cool slightly.
  3. In a large bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well.
  4. In another bowl, sift together cake flour, baking powder, and salt. Gradually add this mixture into the wet ingredients, alternating with milk and cooled tea until just combined.
  5. Divide batter between prepared pans and bake for 25–30 minutes, or until golden brown and a toothpick inserted comes out clean. Let cool in pans for 10 minutes before transferring to wire racks.
  6. For frosting, whip together softened butter, powdered sugar, vanilla extract, lavender extract, and a splash of milk until smooth.
