Instructions
- Crush 24 Oreos into fine crumbs using a food processor or zip-top bag. Mix with melted butter until combined, then press into the bottom of a 9-inch springform pan to form the crust.
- In a mixing bowl, beat softened cream cheese until smooth. Gradually add sugar and mix well.
- Gently fold in whipped topping and vanilla extract until just combined.
- Stir in crushed Oreos from 4 additional cookies into the mixture.
- Pour the cheesecake filling over the crust, smoothing it out evenly. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Before serving, garnish with more crushed Oreos on top. Slice with a hot knife for clean edges.
