- 1/4 cup water (more as needed)
- 2 medium starchy potatoes, boiled and mashed
- 1 cup green peas (fresh or frozen)
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp garam masala

Instructions
- In a large bowl, mix flour and salt. Gradually add water while kneading to form a soft dough. Cover and let rest for 30 minutes.
- Mash the boiled potatoes in a bowl. Add green peas, cumin seeds, coriander powder, garam masala, and chili powder; mix until well combined.
- Divide the rested dough into small balls. Roll each ball into thin circles (6 inches in diameter) and cut them in half.
- Fold each semi-circle into a cone, sealing the edge with water. Fill with 1-2 tablespoons of the filling and seal the top edge firmly.
- Heat oil in a deep pan over medium heat. Fry samosas until golden brown on all sides, about 5-7 minutes. Drain on paper towels.
