  • 8 oz shrimp, peeled and deveined

  • 2 large eggs
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil

Instructions

  1. Cook jasmine rice according to package instructions. If using day-old rice, break up any clumps.
  2. In a large skillet over medium-high heat, add oil and sautΓ© shrimp until pink (about 2 minutes per side). Remove and set aside.
  3. Add more oil if needed. Stir-fry mixed vegetables until tender-crisp (3-4 minutes).
  4. Push veggies aside and scramble eggs until fully cooked; mix everything together.
  5. Add cooked rice and shrimp back into the skillet with soy sauce and sesame oil; stir well and heat through for about 2 minutes.
