Instructions

  2. Slice the tops off the bell peppers and remove seeds; place them upright in the baking dish.
  3. In a skillet over medium heat, cook diced chicken until no longer pink (about 6-7 minutes). Season with salt and pepper.
  4. In a large bowl, mix cooked chicken with rice, diced tomatoes, garlic, onion, Italian seasoning, salt, and pepper.
  5. Generously stuff each bell pepper with the filling mixture.
  6. Cover with foil and bake for 25 minutes; remove foil, top with cheese, and bake uncovered for an additional 10 minutes until cheese is melted.
