  • 4 medium bell peppers (red, yellow, or green)
  • 1 cup cooked rice
  • 1 lb halal ground beef or turkey
  • 1 cup halal mozzarella or cheddar cheese, shredded
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds; place upright in a baking dish.
  3. In a pan over medium heat, add olive oil and sauté onions until translucent. Add garlic and cook until fragrant.
  4. Stir in ground meat and cook until browned. Mix in cooked rice, tomato sauce, cumin, paprika, salt, and pepper until well combined.
  5. Stuff each pepper generously with the filling and top with shredded halal cheese.
  6. Cover with foil and bake for 30 minutes; uncover for the last 10 minutes to brown the cheese.
  7. Allow to cool slightly before serving.
